
Cabbage and potato hash with fried egg

Ingredients
3 x 300g cans cooked new potatoes, drained, rinsed and patted dry with kitchen paper, larger potatoes halved
Low-calorie cooking spray
2 onions, finely sliced
1 sweetheart cabbage, finely shredded
1 tsp ground nutmeg
4 large eggs*
Method
1. Spread the potatoes out on a non-stick baking tray in a single layer, spray with lowcalorie cooking spray and roast for 1 hour, turning halfway.
2. Meanwhile, spray a non-stick frying pan with low-calorie cooking spray and place over a medium-high heat. Cook the onions for 10 minutes, or until starting to soften. Put the cabbage in a colander and pour over boiling water. Add to the pan with the nutmeg and fry for 6-7 minutes, until the cabbage is very soft. Add the potatoes, crush roughly with a wooden spoon and fry for 5-6 minutes. Meanwhile, fry 4 large eggs in low-calorie cooking spray until cooked to your liking. Divide the hash between 4 plates and top each with an egg and a twist of freshly ground black pepper.
