Spicy quorn balls with pasta

Ingredients

Low-calorie cooking spray

2 x 300g packs frozen Quorn Swedish Style Balls

750g passata with onion and garlic

200ml vegetable stock

4 tbsp tomato purée

1 tsp cinnamon

1  tsp dried red chilli flakes

2  tsp dried mixed herbs        

1 tsp ground cumin

Salt and freshly ground black pepper

300g dried tricolore penne or other pasta shape

A handful of fresh basil, to garnish

Method

1.           Spray a large frying pan with low-calorie cooking spray and place over a medium heat.

Add the frozen Quorn balls and stir-fry for 4-5 minutes.

2.           Stir in the passata, stock, tomato purée, cinnamon, chilli flakes, dried herbs and cumin. Bring to the boil, cover, and then reduce the heat to medium. Simmer for 20-25 minutes, or until the sauce has thickened. Season well.

3.           Meanwhile, cook the pasta according to the instructions and drain well. Divide the pasta and Quorn balls between 4 bowls and garnish with the basil.
