Classic burger
Ingredients
Makes 4 patties
- 1kg beef mince, preferably at least 20% fat
- salt and pepper, to taste
- 4 slices cheddar cheese (optional)
- 4 burger buns, sliced
- mustard, to taste
- ketchup, to taste
- 1 tomato, sliced
- 1/2 red onion, sliced
- 4 to 8 leaves lettuce.

Method
- Form the beef gently into four burgers. For the juciest result, avoid densely compacting the mince; work gently and form loosely. Season well on both sides.
- Heat a griddle pan or frying pan over a medium-high heat. Add the burgers to the hot pan and fry for a total of 6 minutes for medium-rare, 8 minutes for medium, or 10 or more minutes for well done, flipping the burgers only once halfway through cooking. Add cheese (if using) during the last minute of cooking and allow to melt. Remove the burgers from the pan.
- Spread the mustard and ketchup to taste on the bottom half of the bun then place the burger on top. Add some lettuce, tomato and onion then sandwich with bun lid. Serve immediately.
