Ingredients
500g dried linguine or spaghetti
Low-calorie cooking spray
1 onion, finely chopped
2 garlic cloves, finely sliced
400g can chopped tomatoes
1 tsp dried chilli flakes
Large handful of fresh basil, chopped, plus leaves to serve
100g fat-free natural yogurt
Method
1. Cook the pasta according to pack instructions. Drain and keep warm.
2. Spray a large frying pan with low-calorie cooking spray and place over a medium heat. Add the onion and garlic and stir and cook for 3-4 minutes, then add the tomatoes, chilli and sweetener. Turn the heat to high and bring to the boil. Reduce the heat to medium, cover and cook gently for 8-10 minutes, stirring occasionally to prevent sticking.
Remove from the heat and stir in the chopped basil and the yogurt, season lightly, and stir through the drained pasta. Sprinkle with the basil leaves and serve straight away
