Creamy pesto style houmous
Ingredients
2 x 400g cans chickpeas, drained and rinsed
Juice of 1 lemon
4 garlic cloves, crushed
1 tsp dried Italian mixed herbs
6 tbsp each of chopped basil and flat-leaf parsley
250g fat-free cottage cheese with onion and chives
Vegetable crudités, to serve
Method
1. Place the chickpeas in a food processor and blend until softened.
2. Add the remaining ingredients and blend again until fairly smooth. Season lightly and transfer the mixture to a serving bowl and chill until ready to use.
3. To serve, place the houmous bowl in the centre of a large plate and surround with your favourite vegetable crudités.
